1 pack of “It’s Skinny” fettucini pasta
1 shallot
3 cloves of garlic
1/4 cup onion
1 zucchini
6-7 oz of shrimp (I used 6.30)
1 cup of broccoli
1/3 cup matchstick carrots
1 cup of bell pepper
1 tbsp sesame oil (or 1/2 tbsp sesame oil mixed with neutral oil)
1/2 cup basil
Huy Fong Foods Chili sauce, adjust to taste (this brand specifically is 0 calories)
1 tbsp corn starch
3 tbsp soy sauce
4 tsp allulose or sugar substitute (note- if using a different sugar substitute, taste first as allulose is one of the milder substitutes)
1 tsp fish sauce
Instructions:
1. Mix together the sauce and set aside
2. Dice the shallots, onion, and garlic and sauté over the oil
3. Add in zucchini and broccoli and cook until they begin to get a bit soft, about 5 min
4. Add in the sauce until it warms
5. Add in the carrots, pepper, and shrimp. Cook until the shrimp is cooked through
6. Rinse the pasta and add. Mix and cook until the pasta is warm and coated in sauce
