The first steak looks extremely dry eventhough it was cooked in oil, which is usually the case with deep fried steaks. Also you never flipped the steak while it cooked which added to the dryness.
The second steak should have been rested without the foil or for longer with the foil. Too many juices came out when you unwrapped it showing that the foil wrap did not aid in the resting process.
Also last point, using that much vegetable oil when cooking for the home is not good. Vegetable oil is the cause of heart disease. Its excusable in a commercial kitchen because it is inavoidable. But when you cooking for yourself and trying to show an audience the best quality steak, sunflower oil is not the best option. I would use a mix of virgin olive oil and butter flavour and quality.
