    Medium is 140F-150F

    Doneness is well defined in beef. This steak in particular looks to have maybe carried over a bit higher than 135F but it’s probably warm & red based on pictures so it’s still looking like medium rare.

    Medium rare, I’ve heard if you want a little bloodier you can ask for rare/medium rare and a good chef can figure it out.

    I agree with this med-rare consensus, I’ll add that the last cut on the skinny end starts getting a little mediumy but not really.
