

Smoked unwrapped at 225 until they passed the bend test (almost 6 hours). I used Meat Church Gospel rub. Rubbed the night before, wiped off the moisture, re-rubbed then popped them into the smoker. Spritzed every 30-40 minutes after the bark had set (about 3 hours in).
This is the second time I've made them without wrapping and I'm never going back to wrapping my ribs! I love the bark and the tug.
