My mum (Chinese) used to do this with a lot of foods that you would usually serve with pasta or bread. Bolognese? On rice. Baked beans and cheese? On rice. Beef stew? Riceee.
Honestly it’s pretty good. The carbs are just a vehicle for the topping anyway.

Imma be honest. When my wife goes out of town I put as little effort into feeding myself as possible. I wouldn’t eat this because it wouldn’t be in my cupboard, but I’ve made stovetop tuna casserole from canned tuna, boxed Kraft, frozen carrots & peas, with canned breadcrumbs on top. Same energy 😂

I mixed rice with baked beans Id reduced in a pan and it was honestly really good and pretty well rounded in terms of macros. I’m a broke student though.
