These high-protein NYC-style bagels are chef’s kiss—they’ve got that classic, yeasty flavor and chewy texture you love, with 20g of protein each. 135g All Purpose Flour
85g Vital Wheat Gluten
6g dough conditioner (optional)
4g salt
5g vinegar
166g warm water
4g active dry or instant yeast
9g honey

1: Combine warm water, honey, and yeast in one container. Set aside to bloom.

2: In a separate bowl, combine all the dry ingredients, then slowly add the bloomed yeast mixture and vinegar while mixing until a shaggy dough forms. Continue kneading with your hands until it becomes a smooth ball. Cover and rest for 1hr.

3: Divide the dough into four 100g pieces. Shape each ball of dough into a bagel, making the hole extra wide to account for puffing back up after the second proof.

4: Cover and rest for 30min. Preheat oven to 425°F.

5: Boil bagels on each side for 30sec (total of 1min). Add desired toppings (optional) then bake for 22-25min or until golden brown. Let cool completely before eating 🙂
