Minestrone Soup Ingredients: 1/2 yellow onion diced 1 large carrot diced 2 celery ribs sliced 4 garlic cloves minced 1 zucchini diced 1 cup green beans cut bite size 1 can red kidney beans (15.5oz) 1 can great northern beans (15.8oz) 1 tablespoon tomato paste 1 can tomato sauce (15oz) 1 can diced tomatoes flavored in basil, garlic oregano (14.5oz) 4 sprigs fresh thyme Salt & pepper 4 cups chicken stock 2 bay leaves 1 teaspoon Italian herbs 1 cup pasta shells
Method: Heat up your olive oil and add in your carrots, onions and celery and cook for about 8 to 10 minutes on medium-low heat. Add your garlic and cook for another minute. Add your tomato paste and cook for a couple of minutes to caramelize. Now add all the rest of the ingredients except the pasta and cook for 30 minutes on medium heat. Next add in your pasta and cook for another 10-12 minutes.l depending on the pasta you’re using. Mine only needed 10 minutes. Bon appetit 😋
