Found this Costco cowboy steak in the back of the freezer when I was seeing what proteins I had.

I did a 24 dry brine and then smoked until 130 IT and seared afterwards on high BTU burner.

    Looks delicious! Perfect pinkness… good juices… nice amount of fat… I can’t imagine it being done better!
