Today we are going to do an experiment: we are going to look for the ideal proofing time for a sourdough bread and learn how to identify it in a very simple way, so that you never overproof your loaves again. By baking the 3 loaves we will be able to learn how to identify which one was baked at the right time and which ones weren’t.

Given the time fermenting would help the finger test ok but without when qe should start the finger test its pretty much useless.

How can you tell if bread is under/over or correctly proofed if after you do the bulk fermentation you put it in the fridge and wait a couple of hrs? Can you tell or the finger method only works for proofing at ambient temperature? By the way, awesome videos! Thanks for sharing
