INGREDIENTS:

🥑 Half an avocado (Hass recommended) – PER PERSON
🍤 5 large prawns (shrimp) – fresh and raw, with heads and shells on – PER PERSON
🧄 1 garlic bulb (8–10 cloves) – sliced
🌿 1 bunch of continental parsley (flat-leaf parsley) – finely chopped
🍝 75g (2.6 oz) fresh spaghetti (or your favorite fresh pasta)
🧈 1 tablespoon butter
🫒 3 tablespoons olive oil
🥛 500ml (2 cup) heavy cream (double cream)
🧀 Grated Parmesan cheese (Grana Padano or your choice) – to taste
🧂 Salt and pepper – to taste

METHOD:

1️⃣ Prep Your Ingredients:
Slice the garlic very finely.
Chop the parsley finely.

2️⃣ Infuse the Oil:
Heat a pan over medium heat and add olive oil. Add the sliced garlic and cook gently until fragrant, being careful not to burn it.

3️⃣ Create the Base Sauce:
Snap off the prawn heads and add them to the pan. Sauté until the heads turn bright orange. Add butter, letting it melt, then pour in the cream. Stir well.

4️⃣ Simmer the Sauce:
Reduce the heat and let the sauce simmer gently for 15–20 minutes. Stir occasionally to prevent the cream from burning.

5️⃣ Peel the Prawns:

  2. Great story, lovely family, delicious looking dish, and Hass are my favourite too. Prawns & avocado, wonderful combination. We have an avocado tree, which is my favourite tree ever, because you only pick them as you need them, avocadoes don't ripen on the tree, we're in Queensland. Personally, I would just add the prawns to the finished sauce and take them off the heat. Great video, thank you.
