Lahmacun
Ingredients:
– 3 cups all-purpose flour
– 1 teaspoon salt
– 1 teaspoon sugar
– 1 tablespoon olive oil
– 1 teaspoon instant yeast
– 1 cup warm water
For the topping:
– 250g ground beef or lamb
– 1 medium onion, finely chopped
– 2 tomatoes, finely diced
– 1 green bell pepper, finely diced
– 2 cloves garlic, minced
– 1/4 cup fresh parsley, finely chopped
– 2 tablespoons tomato paste
– 1 teaspoon paprika
– 1/2 teaspoon ground cumin
– 1/2 teaspoon chili flakes (optional)
– Salt and black pepper to taste
To serve:
– Lemon wedges
– Fresh parsley
– Sumac (optional)
Directions:
1. In a large mixing bowl, combine the flour, salt, and sugar. In a separate small bowl, mix the warm water, yeast, and olive oil. Let the yeast activate for 5-7 minutes.
2. Gradually pour the yeast mixture into the flour mixture, stirring to form a soft dough. Knead the dough for 8-10 minutes on a lightly floured surface until smooth and elastic. Cover with a damp cloth and let rise for 1 hour or until doubled in size.
3. While the dough is rising, prepare the topping. In a large bowl, combine the ground meat, onion, tomatoes, bell pepper, garlic, parsley, tomato paste, paprika, cumin, chili flakes, salt, and pepper. Mix thoroughly until well combined.
4. Preheat the oven to 450°F (230°C). If using a pizza stone, place it in the oven to heat up.
5. Once the dough has risen, divide it into 6-8 equal portions. Roll each portion into a thin circle, about 10-12 inches in diameter.
6. Spread a thin layer of the meat mixture evenly over the surface of each dough circle.
7. Transfer the prepared dough to a baking sheet or directly onto the hot pizza stone. Bake for 5-7 minutes or until the edges are crisp and the topping is cooked through.
8. Serve immediately, garnished with fresh parsley, a sprinkle of sumac, and lemon wedges for squeezing over the top.
