1. Tap the clams against the sink (if they contain sand, they will open slightly), discard any broken ones, and soak them in water with salt for at least 2 hours. Rinse them well and place them in a pan with a garlic clove and two parsley stems.
Ingredients:
1.1 lbs of fresh clams (500 g)
7.8 oz of spaghetti (220 g)
2 cloves of garlic
1 bunch of parsley
1 chili pepper
2 tablespoons of extra virgin olive oil (30 g)
Step:
2. Cover the pan and let the clams open over medium heat.
3. Once all the clams have opened, remove them from the pan and filter the liquid they released.
4. Using a teaspoon, separate the clams from their shells, leaving a few in their shells to garnish the dish at the end.
5. Finely chop one garlic clove and fresh parsley.
6. Cook the spaghetti in boiling salted water.
7. Sauté the garlic with a chili pepper. As soon as the aroma is released, add the filtered clam liquid and the clams. Let everything simmer for 5 minutes over low heat.
8. When the spaghetti is almost cooked, drain them, saving a little cooking water. Add the spaghetti to the pan with the clams, sprinkle with some chopped parsley, and toss for a few minutes. If the spaghetti dries out too much, add some of the reserved cooking water.
9. Plate the spaghetti, top with the clams in their shells and some additional chopped parsley. Enjoy your meal!
