    Are you making the sushi and sashimi yourself?

    Was the mackerel pickled with vinegar and salt? If you like mackerel then you should look for fresh sardine/iwashi, saury/sanma, and amberjack/kanpachi if they are available in the market or restaurant. I’d also suggest looking for gizzard shad/kohada which sometimes can be found frozen and mildly pickled in Japanese markets.
