
Found an 11 lb Wagyu brisket from Costco and was able to put the entire thing in an 11” wide vacuum seal bag. 36 hours @ 155f, ice bath, then 3 hours on the charcoal grill using snake method and hickory chips. Meat rested for 1 hour before my first cut. Twas amazing!

How was the bark? Looks pretty nice but hard to tell from the pics of it was crusty at all, which is how I prefer it.

You done really good.
Just beautiful. And you didn’t have to stay up all night tending to a smoker. This is why I shake my head at traditionalists who turn their noses up at sous vide for brisket. It just works.
