I had 3 of these for lunch for a total of 375 calories:

Tostadas—I bought a pack of corn tortillas that are 110 calories for 3, very quickly sprayed with avocado oil, and baked at 400 Fahrenheit for 4 minutes, flip, baked another 5 minutes, sprinkled with salt, and left to cool.

Braised Mushrooms—240g sliced baby bela mushrooms into a skillet on medium-low heat along with 1/4 cup water and 2 tbsp reduced sodium soy sauce. Once bubbling/boiling reduce heat to low and cook until liquids have evaporated. Add 190g thinly sliced yellow onion. Deglaze with a few glugs of red wine vinegar plus 1/4 cup water, 2-3 tbsp dried oregano, 2 tsp ground cumin and reduce again. Deglaze with 1/4 cup water and reduce again. Repeat deglazing/reducing until you have the color and consistency you like. Salt to taste and remove from heat. I like mine partially jammy (not total mush) so this took 2-3 or so additional cycles and total braise time was about 1.25 hours for my preference. You might try using beef or vegetable stock instead of water, but I was trying something new out. You might also use a couple bay leaves but that’s up to you!

Guacamole—store bought (Whole Foods) spicy guacamole.

Cotija Cheese—again Whole Foods

Pickled Red Onion—store bought, I think it was Jeff’s Garden or something but I will double check for anyone interested!
