    Thank you, all! I’ll share the recipe momentarily. I’ve been tinkering with my buttercream recipe for years!

    The chocolate buttercream recipe is also posted, but here’s a half batch version (perfect for cupcakes or smaller stand mixers). For context, I based the original recipe off of a 6 quart professional series kitchen aid, but this version will work in other size stand mixers.

    Half batch *might need additional mixing time to eliminate air bubbles completely*

    2 lb unsalted room temp butter

    2 lb powdered sugar

    1 tsp vanilla extract

    ½ tsp fine salt

    7 oz pasteurized egg whites

    gel colors (optional)

    Melted chocolate 4-6 oz, depending on how chocolatey you like it (I recommend dark chocolate like 65-100% cacao)
