INGREDIENTS
4 large tomatoes
1 red bell pepper
4 garlic cloves
2 small onions
Olive oil
Fresh sprigs of rosemary
100ml vegetable broth
50ml heavy cream

RECIPE
Cut the tomatoes and place them in the baking dish. Cut the bell pepper and add to the tomatoes. Add the peeled garlic cloves. Chop the onions and add them to the baking dish. Pour olive oil over the vegetables, add rosemary sprigs and bake in a 200 degree oven for 40 minutes. Place the cooked vegetables in a saucepan, add the stock and blend. Stir in the heavy cream. Serve with toasted bread and other toppings of your choice.
