    Bake 350 25-30 minutes
    Flour 2, 9 inch round cake pans

    Cake
    3 cups flour
    1 cup sugar
    1 cup light brown sugar
    1 tsp baking soda
    1 tsp salt
    1 tsp cinnamon
    1 1/4 cup olive oil
    3 large eggs
    2 tsp vanilla
    2 cups ripe bananas
    1 can crushed pineapple with juice
    1 cup chopped pecans

    Combine, flour, sugars, baking soda, salt and cinnamon in a large bowl.
    In a separate bowl combine
    Oil, eggs, vanilla
    Mix dry and wet ingredients together
    Fold in bananas, pecans and pineapple.
    Pour into greased pans.
    Icing
    6 ounces cream cheese
    6 TBS butter softened
    2 cups icing sugar
    2 TBS lemon zest
    1/2 tsp salt
    2 cans coconut cream (the top butter like cream, not the liquid part )
    Mix it all together until smooth.

    Looks awesome. I can’t eat coconut but I’m sure the cake is delicious 😋
