This is my favorite food and I was avoiding it thinking the potato amount was going to make this too caloric. Two humongous bowls (500 g) = 341 calories. It is very soupy when first cooked and you have to give the potatoes a good mash to thicken. I love a clear soup, but if you want something thicker, let it cool. The photo is after people claimed all the clear tomato/watery goodness.
This recipe makes around 3/4 full instant pot. I was cooking for my whole family so scale down/use for meal prep.
Here is the recipe, it's very forgiving and in general a good amount of tomato + garlic is going to make it turn out nice.
Recipe:
655 g tomato
1465 g potatoes, rinsed and chopped (I leave skins on bc mine are local with a nice iron taste that makes for an interesting kick)
18 g garlic (this is arbitrary anywhere between 15-20 g would work)
1/2 tsp ghee (butter works)
6 g cumin (this is arbitrary anywhere between 5-10 g would work)
2 tsp coriander powder
.5 tsp Turmeric
1 tsp Red chilli powder (adjust for spice)
3/4-1 tsp Garam Masala (imo essential for the taste, I buy mine from the Indian store, but die hard/rural living people can also make it themselves: https://www.allrecipes.com/recipe/142967/easy-garam-masala/)
1 pinch asafetida (VERY optional, like today I forgot, no biggie in terms of taste. also contains gluten)
Water to just submerge the potatoes.
Directions: Add the ghee, sauté the cumin until slightly toasted, add garlic wait for the color to turn a little white, add the tomatoes, add the spices. Let simmer for 3-5 min until tomatoes have gone mushy. Add potatoes. Add water to just barely submerge the potatoes. I use an instant pot so I set pressure cook high for 4 min. Use a ladle/anything to mash up the potato to create mush and texture (as well as thicken the gravy).
Can serve with rice, but I love it plain. For ex: today I had my two bowls and in the last bowl I mixed in 40g of rice for a little variation. SO FILLING!
