    Cooked the roux too much and/or used stock or broth when the photo is a country or milk gravy.

    Looks better in the second pic if it’s milk gravy you’re after. Just looks like your roux to milk ratio is a bit off.

    Not enough water/broth or too high heat or combination of both.

    I think a common mistake with cast iron is overheating.  So maybe your roux cooked too fast to mix in the milk evenly.

    As others have commented, roux was cooked too long and not enough milk. But also use a whisk. You’re not really going to get the roux fully incorporated into the milk with a plastic slotted spoon.

  14. they didn’t bother to make sure the roux was smooth. they tried to use a weird slotted spoon instead of a whisk to get the lumps out. they heated their pan too hot. they overcooked the roux because the cast iron pan is slow to cool down. they didn’t add enough liquid. ***so*** much wrong with this that it must be rage-bait. is anybody really that dumb?

    Looks fine, just add milk until the thickness is right. It will be a little more dark than the second pic, but just add plenty black pepper to that thang
