    BASQUE

    250 g cream cheese, softened

    45 g granulated sugar

    3 eggs

    135 g whipping cream

    10 g cornstarch

    TIRAMISU

    2 pasteurized eggs

    60 g granulated sugar

    200 g mascarpone cheese

    60 g milk (warm)

    10 g gelatin sheets

    240 g whipping cream

    30 g cocoa powder

    Instructions

    Preheat the oven to 210℃(410℉). Line the baking tray (22*8*6cm) with parchment paper.
    Mix well cheese, sugar and eggs. Add in cornstarch and whipping cream, whisk until incorporated. Sift. Pour the mixture into the baking tray. Bake for 25 minutes. Take it out of the oven after baking, cool in the fridge for 2 hours.
    Separate the eggs. Beat the egg yolks with sugar until pale. Add in mascarpone cheese, Beat until fully combined.
    Use ice water to soften gelatin sheets. Then mix well warm milk and softened gelatin sheets, sift. Add the gelatin milk in the whipped egg yolks, mix well. Pour in the whipping cream, mix well.
    Line a tray (22*11*7) with parchment paper. Demold the basque, place it in the middle of the larger tray. Then pour in the tiramisu mixture. Sent into the fridge to cool for 4 hours. Remove the parchment paper and dust with cocoa powder, enjoy.
