Ingredients (serves 4):
* 720g chicken breast (approx. 3 pieces)
* 1 cup basmati rice (uncooked)
* 80g Tikka Masala paste
* 450g Greek yoghurt
* 1 tbsp honey
* 1 lime
* Bunch of fresh mint
* 1 tsp tumeric
* 1 cucumber
* 250g cherry tomatoes
* ½ red onion
* 40g rocket salad
* 1.75 cups water (for rice)

Method:
1. Ahead of time, cut the chicken into 2-3cm/1 inch pieces, add to bowl with Tikka Masala paste, cover and leave in frige to marinate.
2. Time to cook: water to boil in pot with rice and tumetic. Once boiling, turn heat to low, cover and cook for 12 min. Turn off when finished until ready to use.
3. Skewer chicken pieces and air-fry on 210ºC for 15 minutes, or fan-bake in oven at 200ºC for 25-30 minutes.
4. Thinly chop/dice cucumber, cherry tomatoes and red onion, add to large bowl.
5. Season generously with salt and pepper, squeeze in juice of half lime and combine.
6. Dressing: blend Greek yoghurt, mint, honey and juice of other half of lime.
7. Add rice to bowl once finished and mix ingredients together.
8. To serve, layer rocket, salad mix, chicken and pour dressing over the top.
9. Enjoy!
