I don't really like sweet breakfasts, and I've been cutting back my sugar intake generally, so I've been experimenting with savory French toast. I had ham and herbs left over from Thanksgiving.
I just mixed some herbs, ricotta cheese, and S&P into the egg stuff (you could use whole fresh egg, I'm just trying to finish this carton), soaked the bread on both sides for a minute or two, and fried it in a bit of avocado oil. Ham was just pan fried dry. The calories are so low I could have had more of everything if I wanted, but my appetite is small in the morning anyway and now I have more space for dinner!
