2hrs at 56 degrees, finished in a hot af pan. Learned a lot, can’t wait to continue down this path! Thanks y’all for the info in this sub 🤍

I’m very curious about the people who swear by 137 for rendering the fat a bit more.

Do you guys brine your steaks before the bag/water bath? Or just straight season with herbs/spices/butter etc?

Next time chill it before you sear it. like 7 min in the fridge, flip it, 7 more min. It will chill the outside but keep the inside warm. The brown sear layer won’t go nearly as deep.
