If anyone’s wondering about substitutions, I made this recently with cherry tomatoes instead of sundried, a mix of red / white onions (more than they called for, of course), dried parsley instead of fresh, and a bit of Greek yogurt instead of the coconut milk.
One of the tastiest things I’ve ever made. I’ll follow the recipe closer one of these days, but I needed to try it and made due with what I had on hand. Highly recommended.
