Turkish Lentil Soup Recipe

Ingredients:

1 tbsp olive oil or butter
1 small onion, chopped
2-3 cloves garlic, minced
1-inch piece ginger, minced
1 carrot, chopped
1 potato, chopped
1 tomato, chopped
1 cup red lentils, washed
salt as per taste
1/2 tsp turmeric
1/2 tsp paprika or chili powder
1/2 tsp cumin powder
4 cups water
1/2 lemon (optional, for tanginess)
For garnish:

Chili oil
Fresh coriander or parsley
Crispy onions (optional)

Instructions:

Heat olive oil or butter in a pot. Sauté the onion, garlic, and ginger until fragrant.
Add carrot, potato, tomato, and red lentils. Stir and season with salt, turmeric, paprika, and cumin powder.
Cook for 5 minutes, then add water. Cover and simmer until the lentils and potatoes are tender.
Blend the soup into a puree with the consistency of your choice and bring it to a boil. Add lemon juice if desired.
Serve hot, garnished with chili oil, fresh herbs, and crispy onions.
