Recipe
2 pounds chicken breast with bone
1 cup yogurt
1 – 2 tbsp lime or lemon juice
1 – 2 tsp Madras Curry paste (if you don’t add curry powder below)
Onion & garlic fresh or powder
½ tsp cardamom seeds, cumin, coriander, pepper, salt, curry, turmeric
1/8 tsp cinnamon, ginger, chilli powder
2 cups basmati rice
1 cup water fo chicken and 1 for rice
1 cup stock
Lightly saute chicken in hot pan with oil for a minute each side. {ut the chicken in a baking dish with 1 cup of water, cover and bake at 350F until done. Probably 40 to 50 minutes. Please check the internal temperature of the chicken has reached at least 165 F. Let chicken cool. Remove the skin and meat from the bones.
Saute the onions and garlic in a hot pan with oil for 2 minutes. Remove. Toast the spices for 1 minute. Remove.
Mix the toasted spices, lime juice and curry paste into the yogurt for the sauce.
Separately prepare cooked potatoes and carrots if you want.
Assemble on a plate and enjoy! 😋
Everything in this recipe except the yogurt sauce can be portioned and frozen for a future meal.
