Let steak sit for 40 minutes, seasoned both sides with salt, and pepper. Seared on HOT pan with 3tbs butter and very little minced garlic for 2 mins each side(baste after first flip),then roasted for 3.5mins at 500. Let sit 5ims or so. Top sirloin..had solid marbling, I should've got a pic of the raw filet but alas.

    a lot of juice left on the plate. maybe should have let it sit out a bit longer before you started cooking it. or let it rest more after cooked. juice didn’t soak back into the meat.

    Not bad, cook looks pretty uneven though. You haven’t included any photos that show it clearly other than how we can see the dark crust on top and none on the bottom. If we had a full cross section I’m sure it would be a gradient from top to bottom instead of even on both sides

    Almost didn’t cook it enough. Dare I say another 30-60 seconds on each side would have been perfect. But that looks pretty good, my friend.
