New: Vegan Zuppa Toscana | Olive Garden Copycat. January is National Soup Month and this delicious Zuppa Toscana is easy to make and is loaded with flavor. Although I put a eat2livestrong twist in the soup many agree that is is a tasty copycat of Olive Garden’s Zuppa Toscana soup. This warm, hearty soup has the following ingredients:

Better Than Bouillon Seasoned Vegetable Base (Non-Vegan Use Chicken Flavor)
3 Large Russett Baking Potatoes cubed
6 cups of Kale (Chopped or Thinly Sliced)
1 lb -2 lbs of sweet or spicy plant based sausage (non vegan can use pork, beef, chicken or turkey sausage)
1 medium yellow or white onion
5 garlic cloves diced
Salt & Pepper to taste
1-2 Bay leaves
Red Pepper Flakes
Italian Seasoning
Potato Starch used to thicken the broth (adjust to your liking or coconut cream (Non Vegan use Heavy Whipping Cream)
Garnish: Vegan Parmesan Cheese or your cheese preference, green #onions, Vegan tofu bacon crumbles (Bacon)
