This is an idea I originally saw from my friends Alex and Aki at Ideas in Food as well as from the book Fresh Eggs Daily. It’s a great technique and makes a ton of sense once you realize that cooked-down heavy cream is essentially butter with a higher concentration of milk solids for more intense brown butter flavor.

  3. I’m going to put two and two together and assume the way to get in as good a shape as Kenji is to eat eggs and sausages fried in heavy cream. Diet starts tomorrow.
