I made stuffed peppers a few days ago and individually wrapped each one to keep fresh for the rest of the week. When I felt like one, I just popped it in the air fryer for a few minutes to melt the cheese. I wasn’t sure how long they would stay good for, but today is day 4 and they still taste great!! Such a great and easy way to get protein and veggies in quickly during the week. Y’all must try!!

I’m thinking about making this tonight! Are you going to freeze them?
That looks really good! I love stuffed peppers. I never thought of using them for meal prep & heating them up in the air fryer. That sounds so easy & convenient. Thank you for sharing this. 🫶
This looks good !! I need to make more stuffed peppers. What’s the filling?
What did you put in there? Is there a recipe! That Looks really good
It’s crazy more people don’t have this in their rotation! nice job. Love these, learned how to do it when dating a girl in France who swore by them. Works great with beaufort if you can find it.
Stuffed peppers are amazing!!
You just reminded me how great my last batch turned out, thanks! I think I know my plan for next week now 😀
Pretty sure you’re supposed to post the recipe 🙂
One of my favorite meals!!!
Never been a stuffed peper fan. I don’t know why. I love peppers haha.
Stuffed peppers are one pf my favorite meal preps!
Those look great! Good job!
Recipe pls!
Please post your recipe!
We recently added a rule (#6) requiring either a recipe or list of ingredients, since it is so often requested. If you wouldn’t mind adding that we’d appreciate it!
Gonna need dat recipe!!
Looks fantastic
I have never had a stuff pepper, but yesterday I bought two nice peppers from Aldi. I think I will make this tomorrow.
Wish me luck.
I used to do these too, my only problem was the texture and greasiness after re-heating them with a microwave. Eventually my work got a toaster oven, and that worked much better.
Just tried out a week of stuffed peppers after seeing [this](https://www.reddit.com/r/MealPrepSunday/comments/1hymys9/beef_and_turkey_stuffed_peppers_340_calories_40g/) post on here a few weeks back.
I work from home, so I just had to prep the filling. Then every day, an hour before lunch I cut open a pepper, load it up and toss it in the oven. Really good.
Damn thats good to know. I’ve seen the stuffed peppers at costco but I figured they didn’t prep that well so I never really gave them a second thought, but now I might!
I’m so sorry, I’m new to this group and didn’t realize I was supposed to post the recipe!!! Here is what I followed but I made a few changes (left out rice):
https://downshiftology.com/recipes/stuffed-peppers/#wprm-recipe-container-42987
First, I cut my peppers in half and took out the seeds.
Then I coated them in olive oil and baked them at 350 degrees for 15 minutes to get them soft.
While they were cooking, I started on the filling. You can really do whatever you want but I just sauteed some yellow onions, ground beef, and added some tomato paste at the end and whatever seasonings I had on hand.
I then stuffed each pepper with the meat filling and topped with freshly grated mozzarella and individually wrapped each one in plastic wrap and popped in the fridge.
When I felt like one, I took it out of the wrapping and popped it in the air fryer at 350 for 3-5 minutes until the cheese melted.
Sorry for not posting the recipe earlier!!
That looks delicious!!
Looks great!
I brought four bell peppers a couple of days ago but have been distracted and forgot entirely what I planned to do with them. Your recipe sounds good.
