I made stuffed peppers a few days ago and individually wrapped each one to keep fresh for the rest of the week. When I felt like one, I just popped it in the air fryer for a few minutes to melt the cheese. I wasn’t sure how long they would stay good for, but today is day 4 and they still taste great!! Such a great and easy way to get protein and veggies in quickly during the week. Y’all must try!!

    It’s crazy more people don’t have this in their rotation! nice job. Love these, learned how to do it when dating a girl in France who swore by them. Works great with beaufort if you can find it.

    I used to do these too, my only problem was the texture and greasiness after re-heating them with a microwave. Eventually my work got a toaster oven, and that worked much better.

    Damn thats good to know. I’ve seen the stuffed peppers at costco but I figured they didn’t prep that well so I never really gave them a second thought, but now I might!

    I’m so sorry, I’m new to this group and didn’t realize I was supposed to post the recipe!!! Here is what I followed but I made a few changes (left out rice):

    First, I cut my peppers in half and took out the seeds.

    Then I coated them in olive oil and baked them at 350 degrees for 15 minutes to get them soft.

    While they were cooking, I started on the filling. You can really do whatever you want but I just sauteed some yellow onions, ground beef, and added some tomato paste at the end and whatever seasonings I had on hand.

    I then stuffed each pepper with the meat filling and topped with freshly grated mozzarella and individually wrapped each one in plastic wrap and popped in the fridge.

    When I felt like one, I took it out of the wrapping and popped it in the air fryer at 350 for 3-5 minutes until the cheese melted.
