Flame grilled shrimp & mojo slaw recipe🤍
INGREDIENTS:
– 1 lb of jumbo shrimp
– 2 tbsp of La Lechonera’s Mojo criollo
– ¼ cup of La Lechonera Sazon Pa’Todo seasoning
MOJO SLAW INGREDIENTS:
– 8 oz of shredded red cabbage
– 1 cup of shredded carrots
– ½ cup of Greek yogurt
– ¼ cup of La Lechonera’s Mojo criollo
– 1 large orange squeezed
– 1 lime squeezed
– ¼ cup of agave honey
– 2 oz of chopped cilantro
– 1 tbsp of garlic paste
– 1 tbsp of fresh oregano
THE COOK:
– To prepare your mojo slaw, combine the listed ingredients. I suggest mixing the wet
ingredients prior to adding the fresh produce. Refrigerate the mojo slaw for at least 1
hour.
– Prepare the Shrimp: Remove the shrimp shell, devein, and rinse the shrimp thoroughly.
– Once the shrimp is thoroughly cleaned, add La Lechonera’s Mojo criollo as a binder and
then season it with La Lechonera Sazon Pa’Todo.
– Optional: If you intend to grill your shrimp, I suggest adding them to pre-soaked grilling
skewers. I recommend moistening the skewers for three hours or more before grilling.
– Cook your shrimp at a medium-high heat for 3 to 5 minutes on each side. If you choose
to grill them, I recommend using mesquite wood to achieve a Tex-Mex flavor.
– Allow them to rest for 5 minutes before serving!
– Enjoy in a delicious taco, rice bowl, or even a salad!
