I'm caramelizing six pounds of sweet Vidalia onions tonight. I'll be watching and stirring occasionally as it cooks down over the next few hours. The house is going to smell heavenly!

    Fry up the onions first and put them back after they shrink a bit.

    Fwiw, crockpots do come in various sizes. Mine big one is probably 50% larger, then I have one this size, and mini ones about 1/2 the size
