I think I accidentally started these Longhorns too early…(Zone 6b).
I have them in a small flower pot. Should I move them to their final 5 gallon bucket, but ditch the heating mat? For reference the room I’m in is 67-72 degrees F and outside temp in MA right now is 16-32 degrees F.

zone 6b here, I’m about to start some plants real soon. My best crop ever came from some plants that I started in November, which then went out in May the next year. Established plants are a great idea to get a head start. You’ll be fine

I don’t see the problem, it’s actually great. You can keep them in that pot for another 2-3 months, they will be just fine. And by march-april you will already have flowers.
6b here as well, and I started my plants in november. Some of them already popped flowers and peppers. It’s great.
My pots are about 29cm wide, and I don’t plan on upgrading. Plants are ok even in smaller pots, but will be smaller and will give smaller yields. Once you move it to a bigger pot, it will expand. This is great of you want to keep indoor plants smaller.

As long as the location of the seedlings are not in too cold of a location, I would ditch the heating mat now. It really only needs that to germinate the seeds. It may also slow the growth of the seedlings a bit without the extra heat.

As long as you have good lighting to keep them going you should be fine! Gives you a head start on them for sure
