Hey, wanted to share my first meal prep for the year! This is, in spanish as it sounds better: puerco en salsa verde! I still have teouble with how much rice I do and how to cook it 😆 but getting there

Ingredients:
Green zucchini
Pork chop
Green tomatillo
Cilantro
Garlic
Onion
Rice

  1. Place the pork chops in a pot with a little water, previously seasoned with salt and pepper. Once cooked, remove and cut into small cubes.
  2. Boil the tomatillos (I use 3 or 4 for 5 pork chops). Once softened, blend them with a handful of cilantro, salt, onion, garlic, and one cup of the same water used for boiling.
  3. Cut the zucchini into small cubes (I try to remove all the seeds).
  4. In a skillet, heat one tablespoon of oil. Once hot, add onion and garlic ground in a mortar. Let it cook for one minute, and once browned, remove from the skillet. Then immediately add the blender mixture. Cook on medium heat until it starts to boil, tasting for salt levels as it cooks.
  5. Once the sauce starts boiling, add the pork chops and zucchini. Simmer for 10 minutes over low heat.
  6. For the Rice, just normal white rice: Wash the rice and cook with two cups of water per cup of rice, adding salt and pepper. Sometimes, I use the water from the pork chops for extra flavor.
