    – Dry brine for 24 hours
    – Season with a generous amount of black pepper (already enough salt from dry brining)
    – Smoke at 250 until internal reaches 110
    – Pull and let rest while coals heat up
    – Sear 90 seconds per side
    – Devour

    Since perfecting home cooked steaks, I’ve often found myself disappointed after spending $80+ for mediocre steaks at restaurants. I know the premium big money place are probably better.

    I have a hard time accepting that grill needs to cost that much. There are other ceramic grills for a fraction of the price.

    I guess it all comes down to cleaning and maintenance. How easy is it to clean and how long will it last.
