I present to you a staple of the Campania region, and queen of the carb on carb dishes.
Pasta with potatoes and provola cheese.
Super easy
1) Sauté finely diced onions celery and carrots.
2) Add a couple of cherry or plum tomatoes for color
3) add potatoes cut in squares and water, cook until soft
4) add the pasta to the same pot and cook it, but turn it off 3 or 4 minutes before it's done
5) layer pasta and diced provola cheese in a tray, top with parmigiano for the crust
6) bake it (I personally did it in the air fryer at 220 degree Celsius for 6 minutes)

I approve of baking pasta that is usually served straight from the pot. Grew up eating pasta patate from my Sicilian mother but she served it after step 4 and it was delicious but I’m going to try this version. 👍
