Timelapse-man back with one from a breakfast shift at my old deli. Not the busiest we’ve been but pretty close. It was just me cooking and cashing out from 5:30 until about 9, when my boss (lady in green) comes in.

Yes I changed my gloves every time after I handled money

Now all we need is for someone to order a few pancake stacks to slow things down a little.

Watching the cheese melt was hypnotizing

I couldn’t see anything but all that unrestrained hair! Ick!

Cooking on this kind of line is lowkey my dream, I loved sitting at the counter at these mom & pops as a child

You put the hash browns *IN* the sandwich, right?

I miss these kinds of breakfast establishments in my country.

With it sped up like that, it seemed like people were robbing the cash register when you or your co-workers’ backs were turned.

You really should have a hat/hairnet and you should be washing hands and changing gloves between tasks

Why you popping the eggs bro soft egg yolks are the pinnacle of the breakfast

  10. Bet it felt like three hours going through it and 10 hours after it.
Amazing what one person can do to feed a lot of people a good morning meal. Thanks for what you do

As an European that as cooked in high end restaurants all my life, this is kind of a dream job for me.. It looks simple yet delicious, and the intimacy between costumer and staff must be a great change for someone used to what I am, maybe one day I’ll open my self a intimate dinner style joint and have some fun, with those coffe refills and everything, a man can dream

I worked for a mom and pop deli on the flat top for a while too. Thankfully eggs werent on our menu (we were mostly a lunch time spot) but all the sandwiches were grilled and soups/cookies were made fresh everyday. We had one day a month were we would issue 50% off coupons to all of our long standing customers. The deli was sort of an institution in the area and we would cater lunches often for local businesses.

Anyhow, coupon day was completely insane. When i would clock in at 6am on coupon day, the catering/delivery orders would already be lined up across the counter. We were open 11am-2:30pm and i made about 150 sandwiches in that time, not including the ones we prepped before we were open for delivery orders. It was nuts. My first coupon day, i lagged hard and slowed us down so much i got a classic chewing out in the walkin xD. Nothing like the team camaraderie of getting through those tough days though. Loved the feeling of getting good at coupon day to the point where is was busy af but no big deal eventually. There’s really nothing quite like working on a kitchen team.

  14. God bless why don’t griddles just come pre-installed? So useful.

Is it just me or is anyone else concerned about how much they leave the cash drawer wide open?
