I don’t meal prep a lot, but this is one of my go to’s for when I do. You can use any pasta you like, but I love cheese tortellini. I also enjoy it with rotini, especially the Tri-color rotini.
It’s just chilled pasta of choice, Kalamata olives, some diced bell pepper, feta, and Kalamata olives. For the dressing I just used some Italian. Greek vinaigrette would probably be good too.
If I had any mini pickles I would’ve cut those up and added them too because they add a nice crunch and go well with the olives.

    I love this too! I don’t do olives but i do the other ingredients plus diced up cucumbers and it’s so good. This looks very similar to my lunches this week!
