Filet cooked at 220F until internal temp of 115F, then finished in cast iron. I think I need to let the pan heat up a bit more next time, as this is a little more done than I was hoping for

  4. Looks good. A hotter pan needs less sear so your grey bands are much smaller. I usually sear over an infrared burner. 30-45 seconds a side and it’s got crust for days. I’m hungry now. 👏
