Sheet pan meals are a busy mom’s dream – they are quick to put together with pretty minimal clean up and are generally very light and healthy! First up is Harissa Chicken Thighs with Yogurt Dill sauce! So yummy! You can use any chicken seasoning you like but notice that I used my very own spice blend I’ve created in partnership with @selefina.spices – Balkan Medley – check out their website to order your own jars!
✨ Ingredients
1 package of chicken thighs
Chicken seasoning
Vegetable seasoning
1 cup harissa paste
1 large yellow onion
2 bell peppers
15-20 baby potatoes
Juice from 1 Lemon
Salt and pepper
3 tbsp greek yogurt
Dill to taste
1-2 garlic cloves
1️⃣ Preheat the oven to 425F
2️⃣ Season the chicken thighs with salt, pepper and your desired seasonings. Add the harissa and the juice from half a lemon and coat well. NOTE – let marinade for 30min-1hr if possible but not necessary.
3️⃣ Halve the potatoes and slice up the onion and peppers. Place on a cookie sheet and season with salt and pepper and your favorite vegetables seasoning (I used @thespicehouse vegetable blend). Toss with a splash of olive oil and spread evenly on the sheet.
4️⃣ Place the seasoned chicken thighs right on top of the veggies and bake for 30-35 min until the meat reaches internal temperature of at least 165F and the potatoes are soft when pierced with a fork.
5️⃣ While the meat and veggies cook chop up the garlic and dill. Place in a bowl with the yogurt, juice from half a lemon and salt and pepper. Mix well and serve on top of your cooked meal.
