Quick eats idea: Sheet Pan Chicken Dinner

This is a simple moroccan-inspired chicken dinner thats as easy as it gets, and its so good!

I topped this with a creamy greek yogurt sauce and some cucumbers, walnuts, and fresh herbs for a burst of flavor and it was incredible. I used butternut squash here, but if you aren’t watching carbs too closely, feel free to use potato or even sweet potato.

Here is how I made it:
.1.Add 2lbs chicken thighs to a bowl. Drizzle with 1 tbsp olive oil, 2-3 pinches of salt, and season with 1 tbsp cinnamon, 1 tsp turmeric, 2 tsp ground cumin, fresh cracked black pepper, ½ tsp grated ginger. Mix really well, then places onto a sheet pan lined with parchment paper.

2.Next, I peeled and cut 2 medium carrots, cut 1 red onion into eights, and cubed up 1 small butternut or honey nut squash. Add these to the sheet pan along with the chicken, drizzle with olive oil and place in the oven at 425F for 35-38 mins.

3.While that’s going, make your sauce. In a jar, combine 4 tbsp olive oil, the zest and juice of 1 lemon, ¼ cup Greek yogurt, ¼ tsp cumin, a pinch of salt, 2 tsp apple cider vinegar, and 1 tsp honey. Shake or blend, then add 2 tbsp chopped cilantro and ¼ cup chopped mint. Taste and adjust.

4.Remove chicken from the oven add spoonfuls of the yogurt sauce, some finely diced persian cucumber, some crushed walnuts or pistachios, some fresh chopped mint, and enjoy.
