Ingredients:
• 4 boneless pork chops
• 3 tbsp olive oil
• 3 cloves garlic, minced
• 1 tsp dried oregano
• 1 tsp dried thyme
• 1 tsp smoked paprika
• ½ tsp ground cumin
• Zest and juice of 1 lemon
• ½ tsp salt (or to taste)
• ½ tsp black pepper
• ¼ tsp red pepper flakes (optional)
• ½ cup cherry tomatoes, halved
• ¼ cup kalamata olives, sliced
• ¼ cup crumbled feta cheese
• 2 tbsp fresh parsley, chopped
Instructions:
1. Marinate the Pork Chops:
In a bowl, mix olive oil, garlic, oregano, thyme, paprika, cumin, lemon zest, lemon juice, salt, black pepper, and red pepper flakes. Coat the pork chops in the mixture and let marinate for at least 15 minutes (or up to 2 hours for deeper flavor).
2. Cook the Pork Chops:
Heat a grill pan or skillet over medium-high heat. Sear the pork chops for about 4-5 minutes per side, or until they reach an internal temperature of 145°F (63°C). Let them rest for 5 minutes.
3. Prepare the Mediterranean Topping:
In a small bowl, combine cherry tomatoes, olives, feta cheese, and parsley. Drizzle with a little olive oil and mix gently.
4. Serve:

Lemon Herb Couscous with Roasted Vegetables

Ingredients:
• 1 cup couscous
• 1 ¼ cups vegetable or chicken broth (or water)
• 1 tbsp olive oil
• ½ tsp salt
• 1 small zucchini, diced
• 1 small red bell pepper, diced
• ½ red onion, diced
• ½ cup cherry tomatoes, halved
• 1 tsp dried oregano
• ½ tsp dried thyme
• ½ tsp smoked paprika
• 2 tbsp fresh parsley, chopped
• Zest and juice of 1 lemon
• ¼ cup crumbled feta cheese (optional)
Instructions:
1. Roast the Vegetables:
• Preheat oven to 400°F (200°C).
• Toss zucchini, bell pepper, red onion, and cherry tomatoes with 1 tbsp olive oil, oregano, thyme, paprika, salt, and black pepper.
• Spread on a baking sheet and roast for 15-20 minutes, until tender and slightly caramelized.
2. Cook the Couscous:
• In a small pot, bring the broth (or water) to a boil with a pinch of salt.
• Remove from heat, stir in the couscous, cover, and let sit for 5 minutes.
• Fluff with a fork.
3. Assemble the Dish:
• Toss the roasted vegetables into the couscous.
• Stir in lemon zest, lemon juice, and chopped parsley.
