I prepped 2 packages of whole wings which I do quite often. I clip the end and save it for stock. Split the drummy and flatski and put them in big freezer bags with my house marinade- avacado oil, lemon juice, chicken sh*t seasoning, salt, and pepper.
Marinade for a day or 2 at most, then bake for 20 mins @ 375. Then they go in the air fryer whenever I want some crispy juicy wings. My wing sauce is sour cream, truff hot sauce, and green enchalada sauce. I'll post the finished product in a few days. Cost about $.50/ wing. Makes 56 usually- 14 whole in each package typical.

That sounds amazing. Do you give them a salt bath soak and scrub before the marinade? I find that really cleans the funk and lets the flavor pop.

Personally would not marinate wings other than a dry brine. Any wetness compromises the crispiness

Love your set up for wet sloppy wings. You want crispy; more sheet pan, laid flat air dry.
