Crispy Air Fryer Chicken | The Ultimate Chicken Recipe

Recipe:

Turmeric & Citrus Marinade
2 c. Greek Yogurt
1/4 c. Orange Juice
2 tbsp lemon juice
2 tbsp lime juice
1 piece of grated ginger
1 piece of turmeric
2 garlic cloves
.5 of red fresno chili
1 tbsp toasted coriander seed
1 tbsp toasted cumin seed
1 tbsp toasted fennel seed
1 tbsp zaatar
1tbsp pink peppercorn
1tbsp curry powder
1 whole jidori chicken

Citrus Chili Gastrique Glaze
1 tbsp avocado oil
2 cloves garlic minced
2 tbsp chili minced
1 cup orange juice
1/2 cup Meyer lemon juice
2 tbsp lime juice
1/2 cup water
1/4 c. sugar
2-3 tbsp good quality Spanish sherry vinegar

Potato Starch Slurry (to thicken sauce)
2 tbsp potato starch
2 tbsp water

Shirazi Salad
4 Persian cucumbers
2 heirloom tomatoes
1/2 red onion
chopped Italian parsley
1 tbsp dried mint
1 tbsp zaatar
2 Meyer lemon juice
2-3 tbsp sherry vinegar
3-4 tbsp EVOO

Saffron Rice
1 cup jasmine or basmati rice soaked for 10 min
1.25 cup water or chicken stock
minced onion
minced garlic
pinch of Spanish saffron
EVOO

Garnishes
fresh coriander leaves
fresh parsley leaves
fresh mint leaves
sliced radish
