Filet. 1.5 hrs in the sous vide. Seared until 130. How’d I do?

    Looks good, maybe slightly over cooked. Took way to long for those results though.

  2. Filet doesn’t need/shouldn’t be in sous vide that long. Also, what do you mean “seared until 130”? The sous vide gets the desired temp, searing should not be long enough to raise the internal temp.

    Way too long 30 seconds per side in a cast-iron for a sear and into an oven at 500 for about three minutes aside done let rest for 10

    Looks great to me. I would call this medium, which many would say is too far for a filet, but I’d the heck out of it regardless.
