Roasted Tomato Soup
– (5) 10 oz containers of small tomatoes
– 3 regular tomatoes cut in 4
– 1 red pepper
– 3 medium onions
– 12 garlic cloves
– 12 leaves of fresh basil
– 4 strands of fresh thyme
– 1 cup of shredded Parmesan cheese
– 1 cup of heavy cream
– salt & pepper to taste

  5. The soup looks so yummy. Much like the way I make lentil and pea soups adding the heavy cream. Great meal for the cold temps we’ve been having. Yummy!!!
