    Looks good. But avoid tenderized meats if you cook them like this. If there’s any bacteria, it’s not killed at that temp.

    I like mine a lil less cooked in eat mine blue. But great sear and still looks nice and juicy. I wouldn’t be mad

    Looks great! Personal tip: get your steaks directly from the butcher at Costco and ask them give you a package that is NOT “Blade Tenderized”…. Safer for you and easier on the wallet 👍🏻

    On a side note, I hope these were sous vide for at least 2 hours at 131°F. Blade tenderized means they took any bacteria present on the exterior of the meat and shoved it through the whole cut. Since killing bacteria via cooking is a combination of temp + time, these would be safe if cooked for long enough sous vide, but traditional (high heat) cooking methods wouldn’t be safe until the meat was well done. Avoid blade or mechanically tenderized meats, so the flash pan or grill sear can kill any bacteria present, and you don’t have to worry about any food poisoning. I had a case so bad once that the ER nurse told me I was “touch and go” for a while. I won’t disgust everyone here with the details, but it was so bad that I’ve never been back to that restaurant. I always thought food poisoning was just stomach issues. Turns out it can actually kill you if it’s bad enough. Who knew?
