My first SV steak, New York strip at 133° for 2.5 hours then ice bath for 10 minutes and a hot sear. Pretty damn good!

    NY strip, yes. Sometimes I even go to 129, but Ribeyes you have to go 137.

    I did a strip at 134 for 2.5hrs today and greatly preferred that over the last ones at 129. It was still perfectly mid-rare, excellent texture, flavor, and juiciness. The fat rendered really well too.
