

1 cup frozen peppers & onion blend
3/4 cup frozen mixed mushrooms
1/2 cup shredded carrot
1/2 cup canned no salt added kidney beans (drained & rinsed)
3 tbsp mild salsa
1 cup cooked quinoa
Saute peppers/onions, mushrooms and carrots in a non-stick pan for 5 minutes. Stir in beans and salsa, continue to cook until everything is heated. Serve over cooked quinoa. Breakfast is served!

Yum, this is my kind of breakfast!
Looks tasty! What kind of sauce is it? Lately soy sauce, barbecue sauce and all kind of spicy things upset my stomach.
